I don't know of any list of use-cases, unfortuantely. There is some
snippets on the individual match and target wiki pages, that should give
you an idea how to use them.

Please feel free to add use cases to the wiki. I suggest the page
“Chains examples” (doesn't exist yet, just create it).

As for Pre- and PostCacheChain: What questions were not answered in the
manpage / wiki? Just ask them here or in the IRC channel – we're eager
to improve our documentation as much as possible! :)
