strange, your setup looks okay to me..

collectd generally logs to the syslog. The `mysql' plugin in particular
is quote talk-active when it comes to errors.. If you don't have RRDs
I'm confident you'll have some entries there..

Please also note then some days ago a user discovered a bug in the
config-parsing code: Whitespaces at the end of lines are not handled
correctly. You might want to check for those..
